Pitmaster Matt Train: "I'm originally from Louisville, Kentucky and am Active Duty Air Force. I've
been in for 18 years and have visited 47 states and flown all the way around
the world. My love of BBQ runs deep. While growing up in the South (and having
a father with a taste for great BBQ and Blues music) we would travel the
Southern States, hitting up all the small town BBQ spots on our vacations.
After I joined the Air Force, I have spent considerable amounts of time in
Texas and Oklahoma, eating and studying the traditional art of BBQ'ing big
pieces of beef. Later in my Air Force career, I got to spend 6 + years in the
Panhandle of Florida, gaining a love and understanding of pork and chicken in
the Deep South. I have cooked BBQ from Korea to England, to Afghanistan and
all over the US. I've cooked on every kind of smoker out there from pellets,
propane, electric, to charcoal. I have a huge passion for smoking food,
teaching others what I've learned, and sharing stories about BBQ."
